Mini Single Serving Cheesecake Pie

There hasn’t been a day that’s gone by in the past few weeks that I haven’t had at least one of these mini cheesecake pies. They’re that good. You can switch up the pudding or yogurt flavors to suit your taste. I’ve done them with some PB powder and chocolate pudding mix and it was delicious. But my everyday go to is just a simple cheesecake, sometimes I also drizzle a little caramel over the top. They are the perfect after lunch or dinner “finisher”.

  • 46g liquid egg whites
  • 7g sugar-free Cheesecake flavored Instant Pudding Mix
  • 150g Vanilla Greek Yogurt ( I use the Two Good brand)
  • 3 Keebler mini pie crusts (they come in a pack of six. This recipe will use three of them.)

Mix all ingredients in bowl. Measure out about 60g and spoon into three pie crusts. Place on baking sheet and air fry 375 degrees for 7 minutes, just until a very slight browning is visible on top. Take out and refrigerate for at least one hour before diving in. Top with whatever fun goodies you want! (I sometimes like to drizzle a little caramel over the top of mine when I’m feeling fancy.)

Four Ingredient Raw Brownie Bites

  • 1 cup almond butter
  • 1/2 cup maple syrup
  • 2/3 cup cocoa powder
  • 1/4 cup M&M’s (or chocolate chips)

In large mixing bowl, add all ingredients and mix well. Using your hands or a small cookie scoop, form bite-size balls and place on lined sheet. Refrigerate until firm.

Quest Peanut Butter Cups

You can always find these in my pantry any given day. They’re ready to go, pre-portioned, satisfy a sweet tooth and get in some protein all at the same time. Quest has also now come out with smaller versions of these which I love as well. Either way, they’re a great sweet treat when you need one.

Apple Cinnamon Cream Cheese Rice Cake

I’ve only just learned about apple butter recently. It’s apple cinnamon yumminess in a spread! I absolutely love it on top of a caramel rice cake and some whipped cream cheese. Perfect little sweet snack!

Protein Ice Cream

If you have not yet heard about the Ninja Creami, let me make your day. You can have homemade, healthy ice cream with VERY little effort on your part! It’s such a great kitchen appliance if you have ice cream lovers in your house. I think the best thing about making your own protein ice cream is how much volume you get for little macros. It’s perfect for seasons of cutting/dieting when you need something sweet and satiates that need for “more”.

  • 30g PE Science Chocolate Truffle Whey Protein (or use whichever whey protein you like)
  • 10-12 oz. Unsweetened Vanilla Almond Milk
  • 1/2 TBL Mini Semi Sweet Chocolate Baking Chips
  • 2 TBL Sugar Free Chocolate Flavored Syrup
  • 6g Powdered Peanut Butter

Mix all together in Ninja Creami container. Freeze 24 hrs. Take out of freezer and mix it up in the Ninja Creami appliance. Top with whatever you like. I use a little Heath Bar baking bits for a little crunch.
