As I mentioned before here, I’ve started adding more lifestyle coverage to the site and I’m reallllly enjoying playing with content ideas and brainstorming topics you all might benefit from reading, in addition to the fashion posts that I already share. One of the things I wanted to share more with you are recipes that I love. Once upon a time, I used to be known as “The Baker” in our family. But life got hectic and everyone seemed to go on one diet or another, leaving me no one to bake yummy cakes for. Such a sad story, right?
So I’ve decided to change all that, which brings me to today’s simple, but yummy summer recipe.
I tend to eat lots and lots of lean chicken as a source of protein, especially on my designated low carb days. But quite frankly, I get burned out on the stuff. So when I came across an idea for a summer salad, I knew I was going to love it. Instead of chicken, this recipe uses quinoa as the main protein source, so it’s especially perfect for those who are trying to avoid meat all together. The strawberries in this salad, in combination with my very favorite homemade Lime Citrus Vinaigrette, are so fresh and bright in flavor for summer!

Quinoa Strawberry Summer Salad
Ingredients:
6 cups baby spinach
2 cups strawberries, halved
1 avocado, halved, seeded, peeled and diced/sliced
1/2 cup cook quinoa
1/4 cup pecan halves, toasted for more nutty taste if preferred
1/4 cup crumbled feta or goat cheese
Citrus Lime Vinaigrette
1/4 cup avocado or extra virgin olive oil
2 tsp lime zest(from approx. 2 limes)
3 TBL lime juice
1 1/2 tsp honey
Kosher or Sea Salt
Freshly ground pepper
To make the vinaigrette, whisk together oil, lime zest, lime juice, honey and add Sea Salt and freshly ground pepper to taste.
To assemble the salad, place spinach in a large bowl; top with strawberries, avocado, quinoa, toasted pecans and feta or goat cheese. Pour dressing on top of the salad and gently toss to combine.
Serve immediately.
